INGREDIENTS

  • 1 cup pea/chana flour
  • 2 tbsp cake flour
  • 1 onion finely chopped/grated
  • 1 tsp jeera
  • 1 tsp koljana
  • 1 tsp salt
  • 1 level tsp turmeric
  • 1 tsp crushed chilli or 1 fresh chilli
  • Handful chopped fresh danya
  • 1 or 2 spinach leaves
  • 1 tsp baking powder

METHOD

  • Mix and sieve all dry ingredients.
  • Add more or less 1 cup water.
  • Drop teaspoons full into hot oil.
  • Fry for about 1 min. Test with a toothpick.
  • To make bajias thin out batter.
  • Do not shred spinach rather cut into squares
  • dip into batter and shallow fry until crispy.
