Chicken Turnover

INGREDIENTS

  • 2 chicken breast fillets
  • 4 cloves garlic
  • 1-inch piece ginger
  • 2 tbsp green pepper
  • Salt to taste
  • 10 shallots / Red Onion
  • Few curry leaves
  • 1 tsp vinegar
  • Chopped coriander leaves
  • Puff pastry
  • Egg for egg wash

METHOD

  • In a chopper, put all the veggies and pulse. Then add the chicken pieces and grind it all together. Mix well.
  • In a saucepan, pour a little oil and a few curry leaves and heat over a medium heat, then add the chicken mince.
  • Cook it all well until everything is done. Add the vinegar and chopped coriander. Mix well and turn off the heat.
  • Preheat the oven at 220 degrees C.
  • Once filling is cool, add a spoonful to the one side of a pastry square. At the other end of the square, cut 3 or 4 slits and gently fold it over.
  • Place the turnovers on a parchment lined baking tray and brush with egg wash.
  • Bake for 15 to 20 minutes or until its golden brown in colour.
