Pumpkin Fritters

INGREDIENTS

  • 300g SPAR Freshline cubed pumpkin
  • 1 SPAR egg
  • 15 ml (1 Tbsp) sugar
  • 15 ml (1 Tbsp) oil
  • 500 ml (2 cups) flour
  • 5 ml (1 tsp) baking powder
  • Pinch of alt
  • 15 ml (1 Tbsp) vanilla essence

METHOD

  • Boil the pumpkin until soft. Drain and keep the water. You will be needing it later. Set aside the pumpkin to cool.
  • Whisk together the egg, sugar and oil until well combined.
  • Mash the pumpkin until there are no more lumps.
  • Sieve the flour, baking powder and salt and combine with the egg mixture. Add in the mashed pumpkin and mix together until combined. Add in the reserved pumpkin water until a thin mixture is formed. Add the vanilla essence.
  • Shallow-fry spoonful of the mixture in a pan until golden brown on either side.
  • Serve warm with cinnamon sugar.
