INGREDIENTS:
- 125g butter
- ¾ cup castor sugar
- 2 heaped tablespoon sliced /flaked almonds
- 170g pitted and chopped dates (about 20 large dates)
- 1 tsp vanilla essence
- ¼ tsp medium or coarse salt flakes
- 150g Marie Biscuits (broken into pieces)
- Coconut for the top
METHOD:
1.In a heavy based pot, melt the butter and sugar until no granules are visible.
2. Allow the butter and sugar to come to a boil until it thickens, foams, and bubbles.
3. Add in the almonds and stir for a bit, then add in the dates and stir well.
4. Once it boils, simmer on low for 3 minutes. It should be thick and pulpy and bubbly. Use a spatula to make a line in the middle (it should be clearly visible)
5. Remove from the heat and add in the salt, vanilla, and biscuits.
6. Stir and further break the biscuits with a spoon, ensuring all the biscuits are well coated.
7. Transfer to a medium-sized baking dish, lined with baking paper and level and smooth the top. (It comes together quickly, so try and work fast, but be cautious it can get very hot) Sprinkle the top with coconut and allow it to cool before cutting. Once cooled but firm, cut into finger shapes and enjoy
