Spaghetti and Meat balls

INGREDIENTS

Pasta:

  • 275g 00 flour
  • 3 eggs

Meat Balls:

  • Onion (diced)
  • ½ tsp salt
  • 500g mince
  • 1 small handful coriander (chopped)
  • 1 small handful parsley (chopped)
  • 1 chilli (chopped)
  • 1tsp garlic and ginger paste
  • ½ tsp turmeric
  • ½ tsp coriander powder
  • ½ tsp chilli powder
  • ½ tsp ground fennel
  • ½ tsp ground cumin
  • 1 egg
  • 2 slices of white bread (blended into breadcrumbs)

Sauce:

  • 2 onions (sliced or diced)
  • 6 tomatoes (liquidised)
  • 1 tin of tomato puree
  • 2-3 chillies (chopped)
  • 2-3 garlic cloves (minced)
  • 50g tomato paste
  • 1 tsp salt
  • 5 tsp sugar
  • 60ml oil
  • ½ tsp turmeric
  • ½ chilli powder
METHOD
Pasta:

Add flour to a work surface and form a well in the center of the flour and crack the eggs directly into it. Using a fork, whisk in the eggs and slowly incorporate the flour until it becomes too difficult to mix with the fork. Then start to knead it by hand until the dough is fully combined and forms a ball that has some firmness to it, then cling wrap and place in the fridge for 30 mins to rest. Once its fully rested divide the dough into 4-6 portions and roll it out until its very thin, then with a knife (or pasta machine) cut out your fresh pasta. To cook the pasta season boiling water with salt and boil for 2-3 minutes then remove from the water and serve with your favourite sauce.

Meat Balls:

Combine all the ingredients together in a bowl, then form round balls and place them onto a greased baking sheet and bake in pre heated oven at 180℃ and bake for 15-20 minutes (or until done). (Baking time is determined by how big or small you make the meatballs). Do turn the meat balls around once halfway through baking. Once its fully cooked, add it directly into the sauce and serve with pasta.

Sauce:

Sauté the onions in oil along with the salt and sugar until they are soft and translucent, then add in your liquidised tomatoes and chopped chillies and allow it to cook for 5 mins (stirring occasionally). Then add in all your spices and allow to cook for 5-10 mins (add water if needed). Once the spices have cooked, add in the garlic, tomato paste and puree and allow to simmer for 15 mins (stirring and adding water occasionally)

Once the sauce is fully cooked add in the meat balls and bring to a boil, then serve with fresh pasta and enjoy.
