INGREDIENTS:
- 1 orange
- ⅓ cup oil
- ½ cup sugar
- ½ cup yoghurt
- 3 eggs
- 1 tsp baking powder
- 2 cups self raising flour
Ingredients for the Sauce:
- 1 cup orange juice
- 2 tablespoons cornflour
- 2 tsp sugar
METHOD:
1.Rinse the orange, remove the seeds and roughly cut it in chunks, leaving the skin on.
2.Add the Orange, oil, sugar, yoghurt, and eggs, to a blender and blend until smooth.
3.Add the flour and baking powder and blend just until combined.
4.Transfer to a greased loaf tin and bake on 180 degrees for 40 minutes or until a skewer comes out clean.
Method for the Icing Glaze:
1.Whisk the orange juice, cornflour and sugar until well combined.
2.Transfer to a small pot on a low heat and warm, stirring continuously until it thickens.
3.Slice the cake and serve with the sauce drizzled over it.
