INGREDIENTS:
- 500 g (about 2 ½ cups) ripe apricots, pitted and chopped
- 200 g (1 cup) sugar
- 2 tbsp lemon juice
METHOD:
1.In a saucepan, add the apricots, sugar, and lemon juice.
2.Cook over medium heat, stirring often, until the fruit softens and mixture thickens (about 20–25 minutes).
3.Allow to cool and transfer into clean jars, seal and refrigerate.
