Grilled Thai chicken

INGREDIENTS

8 Chicken legs and thighs or 1 whole chicken butterflied
½ cup cashew nuts
½ cup oil
1/4 cup peanuts
2 tbsp chopped fresh coriander leaves
3 tblsp low sodium soya sauce
4 cloves garlic, minced
2 red chillies
5 centimetre ginger
1 tsp corn flour
2 tblsp brown sugar
1 tblsp tamarind paste
2 lemons

METHOD

Blend ingredients and marinate chicken in it

Bake in pre-heated oven for approx. 45 min – 60 min

Serve with plain rice, fried noodle, green salad or parsley potatoes
