Vegetable Soup

INGREDIENTS:

  • 2 cups Split Peas
  • 3 all spice (pimento)
  • 2 cloves
  • 2 large carrots finely grated
  • 2 garlic cloves
  • ¼ red pepper
  • 1 green chilli
  • 1 onion
  • 1 tomato
  • 1 potato
  • ½ cup celery
  • ½ cup parsley
  • ½ medium-sized butternut or 500g butternut chunks
  • Salt and pepper to taste

METHOD:

1.Rinse and soak the Split peas in boiling water, overnight, or for at least an hour. (add ½ teaspoon bicarb)

2.Finely grate the carrots and liquidize, chop, grate, or pulse the veg in a food processor until fine and pulpy. If you prefer a more textured soup, add the vegetables in chunks.

3.On a stove top in a large pot, add the rinsed split peas, whole spices, veg, top up with water, and mix well.

4.Bring to boil for 1 hour until the veg and pulses are soft, stirring occasionally and topping up water as needed.

5.Lastly, add salt and pepper to taste and enjoy with a slice of fresh crusty bread.
