INGREDIENTS:
- 3 eggs
- 1 small pickle onion or ¼ onion finely chopped
- 2 green chillies finely chopped
- 1 small garlic clove finely chopped
- Handful of freshly chopped coriander
- 1 tsp cumin (jeera)
- ¼ tsp coriander (dhania)
- ½ tsp turmeric
- 4-5 slices of sourdough bread
- 3 tablespoons butter
METHOD:
1. Mix the egg, veg and spices together.
2. Add half the butter to a large pan on a medium heat.
3. Once melted, dip the bread (both sides) into the egg mixture and add it to the pan.
4. Using a spoon scoop the onion and egg mixture on the bread side facing you.
5. Cook until the bottom side is golden brown, then add a piece of the remaining butter on each side and flip and fry the remaining side.
6. Turn the heat up slightly higher but watch that it doesn’t burn.
