INGREDIENTS:
- 1 tub x 250g Smooth Cottage Cheese
- 1 heaped cup Self Raising Flour
- 1 tsp Garlic and Herb seasoning
Ingredients for the Top:
- 1 beaten eggs (for egg wash)
- Everything Bagel Seasoning or Sesame/Poppy Seeds for the top*
(*This seasoning is a must for the savoury flavour it has toasted seeds, salt, and onion and garlic powder)
METHOD:
1.Allow the smooth cottage cheese to come to room temperature (soft to the touch)
2.Mix the cottage cheese, self raising flour and seasoning together in a stand mixer with the dough hook or mix it by hand to make a soft, but firm dough.
3.Oil your hands and divide the dough into 6 (for mini bagels) or 4 (for bigger bagels)
4.Roll the dough into balls and make a big hole in the middle.
5.Space them out on a large baking tray lined with baking paper. Brush with the egg and add a sprinkle of Everything Bagel seasoning.
6.Bake on 175 degrees thermofan for 25-35 minutes (mine baked for 30 minutes) until the tops and bottoms are golden brown.
7.Once baked, turn off the heat but leave it in the oven with the oven door slightly ajar and allow to crisp up and cool completely.
8.Slice, add your favourite toppings and serve, or store in an airtight container, or freeze and toast or re-heat in the air fryer for 1-2 minutes before serving.
