Spicy Tikka Tray Bake

INGREDIENTS:

  • 1 -2 kg chicken pieces
  • ¾ cup double cream yogurt
  • 1 tablespoon lemon juice
  • 1 heaped tablespoon ginger and garlic
  • ¼ cup oil
  • 2 tablespoons Sprinkles and Spice Orange Pepper
  • 2 tablespoons Sprinkles and Spice Tikka Spice
  • ½ teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon cumin (jeera)
  • 1 teaspoon coriander (dhania)
  • Salt to taste
  • Pinch of red food colouring for a deeper colour (optional)
  • 1 cup medium peri peri or tikka sauce
  • 1 cup fresh cream

METHOD:

1.Rinse, trim and score the chicken. Allow to drain all excess water.

2.Mix all the marinaded ingredients together to form a thick paste.

3.Add the chicken and mix well. Marinade for at least and hour or overnight.

4.Transfer to a baking tray and transfer to the oven on 200 degrees for 1 hour, until golden brown and charred.

5.Add air fried chips and smother in a sauce made with peri peri sauce / tikka sauce and cream (heat on the stove, before pouring over the chicken)
