INGREDIENTS:
- 2 tablespoons butter
- 1 egg
- 1 cup white sugar
- 1 tablespoon apricot jam
- 1 cup self-rising flour
- 1 tsp baking powder
- 1 cup milk
- 1 tsp bicarbonate of soda
- 1 tablespoon white vinegar
METHOD:
1.Cream the butter, sugar, jam, and egg until well combined.
2.Add the flour, baking powder, and milk and mix until it’s smooth and lump free.
3.Add in the bicarbonate of soda and vinegar and mix well.
4.Transfer to a medium-sized rectangular baking dish and bake at 180 degrees for 30-35 minutes or until a toothpick comes out clean.
5.Once removed from the oven, poke holes in the cake with a skewer and pour the hot sauce over the cake while the cake is still hot.
SAUCE INGREDIENTS:
- 2 tablespoons butter
- 2 tablespoons sugar
- ¾ cup evapourated milk or cream
- 1 teaspoon vanilla essence
METHOD:
1.In a microwavable safe bowl or on a stove top, add the butter, sugar, evapourated milk / cream, and vanilla essence
2.Mix well and heat until it boils.
3.Once hot, pour the sauce over the hot cake.
4.Serve with custard and enjoy
