Breakfast Egg Cups

INGREDIENTS:

  • 12 Mini Wraps/Tortillas
  • 5 eggs
  • ¼ cup milk
  • 1 cup chopped spinach
  • ½ onion finely chopped
  • 3 cocktail tomatoes finely chopped
  • Salt and pepper to taste
  • 1 cup grated Mozzarella cheese
  • 1 feta round (crumbled)

METHOD:

1.In a large bowl, mix together the eggs, milk, veg and season with salt and pepper.

2.Grease spray a muffin pan and add the mini wraps.

3.Add the egg mixture, top with cheese and bake in a preheated oven on 180 degree for 20- 30 minutes.
